Crop development. Fruit size and flesh-to-seed ratio vary widely. Indigenous farmers have selected for fruit size and depth of flesh, with a 67 percent improvement.158 Until recently there was little or no research attention on this important African fruit crop. In the late 1990s the African Safou Network was formed to research, breed, and promote the crop. Today there remains much to learn about this important tree staple with global promise.159

Akee (Blighia sapida)

Akee is popular in West Africa and the Caribbean. In fact, it is the national fruit of Jamaica. In West Africa, where it is native, it is one of several similar species. It was brought to the Americas during the slave trade and became quite popular in some countries. It has naturalized in the Americas to a certain extent.160 In Jamaica, annual trade in the fruit was valued at $400 million US in 2005. Jamaicans treat the fruit, high in protein and fat, something like eggs, often cooking it with salt cod.161 The Spanish name ceniza translates as “vegetable brains.”
